The Brewery:
Back in 2016 William Stuart, who was working at Matsuhisa at the time, was exposed to the world of sake, and he fell in love.  Colorado Sake Co was initially a homebrew effort that rapidly turned into a garage-brewing production, followed by a tasting room, and now its own warehouse with dedicated brewing space.

When William brought his sake to the Colorado market, he was confronted by the odd Colorado ruling that treated his sake brewery like a beer brewery, and therefore did not allow him to sell sake out of his tasting room because sake is taxed as a wine.  This confusion led William to change the liquor laws!  Thanks to him, sake breweries have been reclassified as wineries, and he can now sell sake out of his taproom on Larimer in RiNo.  He also had the state fix their spelling (They called is “saki”).  To make matters more complicated geographically, their sake brewery is at the highest altitude of any sake brewery in the world, which makes the koji production a little tricky.  Through much trial and error, however, they have persevered and figured it out!

Now William and Jennifer Eubanks are managing an entire sake culture downtown, complete with a restaurant, jazz nights, burlesque shows, a comedy club and more!  Where they find the time is beyond us, but we’re grateful for everything they’ve done to promote sake and educate the people of Colorado on drinking it.  Kanpai to them!
