Tasting Notes:
Elegant with a nose of mature red fruit, especially cherries and spicy chocolate. Well structured with the right balance between tannins and softness.
The Wine:
Hand-harvested at the beginning of October, withered in the larder until December. The bunches lose 35/40% of their initial weight.
Destemmed and pressed with maceration for 15-20 days.
Matures in French and American oak barrels for 12-16 mo.
ABV: 15%
Acidity: 5.95 g/L
Residual Sugar: 4.0g/L
