About This Product :

Varietal:
80% Merlot, 20% Cab Franc

Appellation:
AOC Canon Fonsac

The Viticulture:
The vineyard has taken root on the high-quality limestone plateau of the CANON-FRONSAC AOC. It draws its resources from the limestone bedrock and clay soil, which we are committed to preserving through naturally rich biodiversity. The approach prioritizes the implementation of traditional techniques, respectful of the typical characteristics of our grapes and our wines. Our vineyard benefits from a variety of exposures, which fosters a rich and complex expression of our grapes. The Merlot harvest generally takes place around mid-September and the Cabernet Franc harvest in early October. Harvesting is carried out in the early morning to preserve the aromatic freshness of our grapes and respect the natural balance of our terroir and the Canon-Fronsac appellation.

Vinification:
This wine is vinified using traditional methods in raw concrete vats equipped with temperature control. This ensures optimal temperature management and preserves the aromatic freshness of our wines. The grapes macerate for three to four weeks, depending on the vineyard plot and the characteristics of the compounds extracted from the grape skins. After racking and decanting, the wines are aged for 12 months, primarily in vats and partially in French oak barrels. Aging potential: 10 to 15 years.

Tasting Notes:
A complex, structured, and balanced wine. It is characterized primarily by notes of licorice and spice. Grape varieties: a blend of 80% Merlot and 20% Cabernet Franc. Aging potential: 10 to 15 years.

Pairings:
This wine pairs well with charcuterie, red meats, game, and cheeses. Feel free to open or decant this wine an hour before tasting to fully appreciate its aromas.
