The Sake:
American Standard Junmai Ginjo:
Crisp, refreshing, and slightly sweet, our Junmai Ginjo Sake offers elegant floral and fruity notes of melon. Perfectly balanced for any occasion.
Ingredients: Arkansas Rice, Rocky Mountain Water, Yeast, Koji. 15% ABV

Blueberry Hibiscus:
Our Blueberry Hibiscus Sake is a delightful fusion of vibrant blueberry and floral hibiscus. This lightly sweet and refreshing sake offers a unique, fruity twist with a smooth finish.
Ingredients: Arkansas rice, Rocky Mt. water, yeast, koji, sake kasu, fresh blueberries, hibiscus flowers.

Horchata Nigori:
Our Horchata Nigori Sake combines the creamy texture of unfiltered sake with the warm, comforting flavors of cinnamon and vanilla. This rich and indulgent sake is perfect for those who enjoy a dessert-like drink with a unique twist.

The Brewery:
Back in 2016 William Stuart, who was working at Matsuhisa at the time, was exposed to the world of sake, and he fell in love.  Colorado Sake Co was initially a homebrew effort that rapidly turned into a garage-brewing production, followed by a tasting room, and now its own warehouse with dedicated brewing space.

When William brought his sake to the Colorado market, he was confronted by the odd Colorado ruling that treated his sake brewery like a beer brewery, and therefore did not allow him to sell sake out of his tasting room because sake is taxed as a wine.  This confusion led William to change the liquor laws!  Thanks to him, sake breweries have been reclassified as wineries, and he can now sell sake out of his taproom on Larimer in RiNo.  He also had the state fix their spelling (They called is “saki”).

Now William and Jennifer Eubanks are managing an entire sake culture downtown, complete with a restaurant, jazz nights, burlesque shows, a comedy club and more!  Where they find the time is beyond us, but we’re grateful for everything they’ve done to promote sake and educate the people of Colorado on drinking it.  Kanpai to them!
