Tasting Note: Pale crimson, clean, and bright clarity.  Aromas of jicama, strawberry, raspberry and a hint of carnation; fresh, fruity, slightly sweet and with good acidity.

Vinification:
Vines are 18-25 years old.  Grapes are kept cold throughout picking and fermentation for optimal fruit.  All stainless steel, no barrel ageing.

Pairing:
As aperitif, with salmon, hard cheeses, and light sauces.
