Vinification:
This wine is produced from vineyards in Western Sicily perched at 1,200 ft. The grapes are grown organically and harvested by hand. No pesticides, herbicides or synthetic fertilizers are used. The wine is produced at cool temperatures and fermented for about ten days without the addition of enzymes or cultured yeasts. The finished product is stored in cool underground tanks before bottling. Vegan friendly.

Tasting:
Medium-full-bodied and dry with black cherry and toasty aromas. Fruity and earthy with savory tannins and brisk acidity.

Food Paring: 
Very good on its own or with grilled foods and mature cheeses
