The Ingredients:
Petite Champagne Appellation Contrôlée: Hilltop Single Vineyard.
Cognac Philbert is the creator of the “hilltop single vineyard” cognac. By isolating an area of the vineyard which is higher in elevation compared to the overall Cognac region and making a cognac just from grapes distilled from this hilltop. Its geology is unique. The campanian soils of the Dovecote’s vineyard is characterized by chalky soil rich in limestone which allow for natural humidity to permeate and makes for more aromatic and favorful cognacs at an earlier age than normally anticipated. The hilly topography of the valley favors hot air ow through the vines, and its south-west facing slopes increase sun exposure and consequently make richer grapes.
The Dovecote is what remains of a castle tower owned by the local lord who strategically built his fortress on top of the hill to defend his land.
The Spirit:
Character: Fruity & Oily
40% Alc/Vol
A very fruity nose of apples and pears. Nice apricot notes, as well as a silky touch of beeswax. Leathery notes and a touch of vanilla. Mouth: round and fruity, lots of fruit jams. Very soft palate, leading to a medium long finish that is oily and still full of sweet fruitiness. A mellow cognac.

The Philbert brothers, Xavier and Pierre-Olivier are not your ordinary Cognac makers. Fearlessness and innovation are what drive them forward. They took over the family estate in 2006 and introduced different growing methods. Between 2006 and 2012, they tripled the total vineyard area. In 2012, they decided to go against the mainstream and extend the bottled range, and so created Philbert.

We are creators. We were the first in the Cognac region to use a rare cask finish in re-used Sauternes and Oloroso Sherry casks. We are out of step with the usual rules for producing Cognac, we want to make things happen for these product lines. We practice the art of distillation and aging to offer you a different esthetic experience. We design emotions in our estate covering both Grande and Petite Champagne.”
