About This Product :

The Grape:
90% Corvina, 10% Rondinella (and Corvinone in the Amarone skins) 

The Appellation:
Valpolicella Ripasso DOC

Tasting Notes:
Dark and ruby red on the surface, with bombastic ripe red fruits on the nose like black cherry pie, baking spice, and pepper. Complex without being overly aggressive, but very forward and without apology.

The Wine:
Pressed, destemmed, fermented at controlled temp, utilizing the skins of the Amarone to acquire more body and complexity.
Aged for 12 months in French and American oak barrels.
Ripasso is made by combining finished wine—Valpolicella DOC, with the drained, but still fermenting lees (unpressed skins) left over after Amarone della Valpolicella DOCG or Recioto della Valpolicella DOCG and racked to a different container for finishing. The resulting second fermentation, lasting a minimum of 3 days, adds richness and depth to the original Valpolicella wine.
ABV: 14%
Acidity: 5.9 g/L
Residual Sugar: 4.5g/L

Pairs with wild boar, deer, elk, or bean cassoulet.
