"Clarity and transparency" is the meaning of its name in the native Mapuche language. That is exactly what was aimed for with this wine: a clear and vibrant Sauvignon Blanc, with a strong mineral character and an evident sense of origin. Bereziartua is a traditional Basque apple cider produced since 1870 by the Bereziartua family. The finished cider is unfiltered, and natural sediment is an essential component of its character. It contributes to Bereziartua’s fresh, tangy flavor, which is drier than most American and English style ciders.

GSM stands for the initials of the varieties Grenache, Syrah and Mourvedre, which is a commonly used blend in many parts of the world. T stands for Tempranillo, which is NOT something that is found very often blended with the other three. The three varieties were planted on a small parcel for experimental purposes along with our main variety Syrah. Grenache is fruit, Syrah is texture, Mourvedre is the backbone and Tempranillo brings it all together.

60% Syrah, 20% Merlot, 20% Garnacha Tintorera (Alicante Bouchet). Ruby red color. Clean on the nose, of medium intensity, with a presence of ripe black fruit, notes of black pepper and roasted coffee. On the palate it is dry, with medium acidity and well-rounded tannins.

Marselan is a varietal produced in 1961 by crossing Grenache with Cabernet Sauvignon. Very fruity and lively with balsamic, small berry fruit (blackcurrant, wild strawberry, blueberry) aromas, with a lovely, mellow concentration. Easy-drinking.

Though only 250 acres of this rare grape remain, Piquepoul Noir has been grown in Southern France for centuries. It is originally from the Languedoc and is one of the 13 grapes permitted in Châteauneuf du Pape. Ours is produced from one grower’s 5 acre hillside vineyard in Cazouls.

This smooth and vibrant triple-distilled single malt is a unique bottle in the scotch world where only a handful of distilleries are using this production method. Using unpeated malted barley, this whisky has been distilled three times to provide a silk smoothness and a bright, delicate, flavour profile. This whisky has been matured in both bourbon casks and a small about of virgin oak casks, which are married together before bottling. The result is a whisky with an orchard fruit-forward flavour profile, boasting notes of sweet vanilla, apple, pear, peaches, with delicate floral undertones.

“Nama Genshu” means sake which is unpasteurized and undiluted. Sake is almost always pasteurized twice and water is added to adjust aroma and flavor, to lower alcohol content before bottling, but this sake does not go through those processes and retained its integral structure and body.

This is a very neutral, rice-driven sake which is on the dry side. Very rough-and-ready. The label has two funny oni (demons) scarfing sake on it. It's contained in a brick-pack (think: paper milk carton) with a plastic-wrapped straw included. Drinking it brings back memories of elementary school juice boxes... only more adult-like.
